This dark chocolate bar by Luisa Abram is a tribute to a traditional Amazonian food called tucupi. Tucupi is a traditional Amazonian sauce made from fermented wild cassava juice.

Here, it has been freeze-dried, reduced to powder, then combined with Luisa Abram's 70% dark chocolate, which has citrus notes and a slight astringency.

Known for its unique umami flavor, Tucupi adds a complex taste and aroma to this bar. The freeze-dried crystals are a burst of flavors - salty, sweet, sour, and lemony - that harmonize perfectly.

Cocoa farmer and chocolate maker

Rio Purus

The cocoa used in this chocolate is the main source of income for Cooperar, a cooperative founded in 2007. Its 300 members represent 51 communities spread along the 800 km of the Purus River.

In addition to cocoa, they collect nuts and seeds in the Amazon rainforest to produce oil. These multiple sources of income form a diversified forest economy that preserves standing trees rather than cutting them down for construction timber and clear-cutting them for cattle grazing or soy cultivation.

These communities also support themselves through fishing and harvesting other food crops.

Founded in 2014, Luisa Abram is a chocolate maker that dedicates itself to sourcing micro-lot, wildly grown cacao from the Amazon Rainforest. They partner up with local riverside communities that collect, ferment and dry the cocoa beans in the forest. Eco-friendly bean collecting empowers native communities, builds local economies, and encourages rainforest conservation. The chocolate is made small-scale in São Paulo, Brazil by the Abram-Banks family: Luisa, Andre, Mirian and Andrea. Luisa, the eponymous founder of the brand, values commitment to quality in every stage of making a differentiated product.
