Theo & Philo - Dark chocolate 65% with Labuyo chili - PHILIPPINES - 45g

MedalHot
Pod

Like the fiery heroine girls want to be and boys want to have. This much-loved Theo & Philo favorite is both sweet and spicy, combining the velvety richness of dark chocolate with the kick of Labuyo.

Siling Labuyo is a Philippine pepper that developed after the so-called Columbian Exchange. It is a ‘wild pepper’ and has been listed by Slow Food in the Ark of Taste. On the Scoville scale, it scores 80,000 to 100,000 points, making it comparable to Tabasco or Piri Piri."

Cocoa farmer and chocolate maker

Jekjek's Farm

Theo & Philo work closely with cocoa farming families in Malabog (Davao region), specifically in Paquibato, an area of Davao that was known for armed rebellions. Cacao trees have long been present in the region but were neglected until recently.

Gawad Kalinga, a non-profit organization in the Philippines, established itself in the region to help local communities break the cycle of violence and find agricultural livelihoods. It was through Gawad Kalinga that Theo & Philo were connected with this community to support cacao cultivation in the area. In recent years, the armed conflict has subsided, and former rebels have returned to farming, which has led to an increase in cultivated land and the production of very high-quality cacao.

Theo & Philo
The story of Theo & Philo was born from a passion for cuisine, bold flavors, and the timeless love affair of Filipinos with chocolate. Theo & Philo Theo is short for Theobroma Cacao, the scientific name for the cacao tree, which is the origin of all chocolate. Cacao beans can only grow in regions within 20 degrees of the equator, making the Philippines an ideal place for cultivation, a fact rooted in the country's agricultural heritage. The Philippines was the first country in Southeast Asia to cultivate cacao trees. Philo is derived from the Greek word philos, which means love. Love for the Philippines and its many flavorful characteristics, and a love for chocolate. Philo Chua, the chocolatier behind Theo & Philo, realized he could help introduce his country's proud chocolates to the world. Since then, Philo has made it his personal mission to develop a business rooted in sourcing and crafting high-quality chocolates directly from its roots. Theo & Philo means “chocolate and love”, the same elements that go into every Theo & Philo chocolate bar. Today, Theo & Philo proudly highlights high-...
