Cocoa farmer and chocolate maker

Hacienda El Carmen

Finca El Carmen is located 225 meters above sea level in Sonsonate, with a total cocoa production area of 11.8 hectares. It is shaded by trees such as Madre Cacao (Gliricidia sepium), cedar, paterno, mahogany, and zapote. The fermentation process takes place in boxes, followed by sun drying on drying beds. The optimal harvest period extends from August to April.
