Bean-to-Bar

This Sero 70% dark chocolate is made from Guatemala’s most renowned, award-winning cacao, produced by the Finca Kampura plantation in the Izabal province. Grown in agroforestry and organic farming, it forms the base of this rounded, complex chocolate with notes of nuts, almonds, honey, and a hint of mocha, which won the AVPA silver medal in Paris.

Guatemalan artisan chocolatier Sero offers a unique way to discover pure-origin, terroir dark chocolate: through its collection of 4 Bean-to-Bar creations made with indigenous Acriollado cacao (an endemic blend of Criollo and Forastero), sourced from 4 distinct plantations across Guatemala, it takes us on an impressive journey into how soil, climate, and altitude shape cacao flavor.

Cocoa farmer and chocolate maker

Finca Kampura

Kampura is a family-run cacao farm located in Livingston, in the Izabal department—one of Guatemala’s finest origins and the heart of Chocolates Sero’s single-origin range. Renowned for its commitment to sustainability and outstanding flavor, Kampura is a benchmark for organic cacao cultivation in the region.

Kampura is a living, ever-evolving ecosystem. Across 800 hectares, the farm grows cacao under a native forest canopy, preserves primary forest, and cultivates cardamom, mahogany, rosewood, and natural rubber. Each layer (trees, understory, soil) helps regenerate the land, support biodiversity, and serve as a model for fair, climate-adapted agriculture. This land was once degraded cattle pasture. Over the past 12 years, they have restored it into a productive forest: soils alive with microorganisms and mycelial networks, nutrient cycles reminiscent of a healthy rainforest, and a habitat that once again welcomes wildlife. Kampura’s rubber trees sequester so much carbon that they can generate offset credits for the market.

“Fine” cacao… represents only about 5% of global production, but 100% of Kampura’s. Guatemala has a rich cacao history dating back to the Olmec and Maya civilizations. Unfortunately, the country’s cacao production story has largely been overlooked. Today, Guatemala is a net importer of cacao. Kampura, like many others, is helping raise the profile of Guatemalan cacao on the international stage. The company shows how this land—one of cacao’s earliest cradles—can be regenerated while creating meaningful jobs and producing exceptional cacao.

Along the Caqui stream, the team is constantly searching for the best Theobroma cacao specimens among native trees. Kampura can proudly say it is the only farm in Guatemala to hold the full set of SGU clones, a collection of indigenous Guatemalan clones assembled by local agronomists in the 1960s.

The cacao is also certified organic. Unfortunately, the chocolates are not, as it is extremely difficult to source certified sugar.

Sero
Cacao Embassy was founded in 2018 in Guatemala City by three brothers: a chance event gave rise to a shared vision: to do good through high-quality chocolate and rethink cacao culture in Guatemala. While Quique deepened his passion at a pastry school for chocolatiers, Pablo built relationships with cacao producers across the country. Julio, for his part, devoted himself to post-harvest processing in order to improve cacao quality in a targeted way. Cacao Embassy was born from the pooling of their strengths. Their SERO brand, dedicated to their bean-to-bar chocolates, takes its inspiration from the word "serotonin", the chemical substance that cacao naturally releases in the body. SERO chocolates have won international awards, including a silver medal at the AVPA in Paris. Finca Kampura is also considered one of Guatemala’s best cacao origins and has received several awards, notably at the Cacao of Excellence Awards. These distinctions confirm Cacao Embassy’s and SERO’s commitment to exceptional, sustainable cacao. For the SERO brand, close collaboration with the people who grow cacao is at the heart of its priorities. This includes both stable partnerships with small-far...
