This Definite bar is made with specialty coffee from Casa Barista, a single-origin coffee roaster in Santo Domingo, and Sea Salt.

Finca Elvesia is a cacao plantation located in the northeastern part of the Dominican Republic, where cacao plantations were first established. The plantation was founded at the end of the 19th century by Swiss immigrants in partnership with Philippe Suchard. It became the largest cocoa plantation in the Caribbean, even having its own railroad for transportation of cocoa to the port for export to Europe.
The farm has approximately 200 hectares of cacao with special fine flavor and aroma characteristics inherited from over 125 years of careful selection.
After harvesting, the beans are fermented five days in special wooden boxes, then dried in solar driers for approximately seven days.

By sourcing directly from Dominican farmers, they only use high-quality single origin cacao which they roast, winnow, grind, temper and mold into fine chocolate bars with the utmost care. As much as possible, Definite Chocolate uses only locally sourced ingredients to support local industry and to give a touch of Caribbean feeling to every tablet. All bars are made naturally, without any additives. Definite Chocolate was founded by Jens Kamin, who moved from Germany to the Dominican Republic to achieve his dream of becoming a chocolate maker. They are the first Dominican chocolate producer to win an international award, which they earned in 2017 when the company was only one year old.
